I recently was having a craving for something sweet. You know what I'm talking about; where you just want something that has sugar, and lots of it... I tend to not keep many sweets in the apartment so I realized if I wanted something, I would have to make it. I opted to make some cookies from scratch. This way, I know what's going in the cookies (and maybe subconsciously I though it would just make me feel less guilty!). I searched for a few recipes online based off the ingredients I had. As you might already know, there are hundreds of oatmeal cookie recipes online - and at the end of the day, I honestly just picked one. Then I realized I didn't have any baking soda - so I went back to the drawing board. I found a new recipe on Baker Bettie that would accommodate the ingredients I did have.
There is something about baking that is relaxing. When I shoot for posts, I enjoy finding different perspectives of the subject matter to encourage subscribers to see everyday items in a new light. The only trouble is that it makes a lot more of a mess... but I think it is worth it.
I don't mean to toot my own horn, but these are good... very good! They have a light crunch on the outside and a soft interior that will melt in your mouth. Dip it in some (soy) milk and I'm satisfied for a while.
I added a little bit of flaxseed for additional nutrients. The great thing about baking is you can add additional ingredents that don't alter the flavor and add an extra element. I like to add other seeds like chia and hemp to my cooking on a regular basis.
