A spoonful of sugar (and then some)...

I recently spent some of my holiday break at my sister and brother-in-law’s house in Springfield, Illinois. With my nephews having just turned one, I try and get here as often as my schedule will allow but admittedly, it’s never enough!

During the visit, while boys were at daycare, Britton and I had the house to ourselves so we decided to bake some cookies. We decided on peanut butter and chocolate chip cookies, recipe can be found below. We gathered the ingredients, warmed up the oven and pulled back our sleeves…


Regardless if she wants to admit it or not, Britton was excited to work on this... usually she thinks I am being obnoxius and just making a mess, but I know she wanted to be a part of the blog. After all, this mother of one year old twin boys straightened her hair and put on some makeup!!


We had a lot of fun and not to mention, the cookies were on point. We picked a simple recipe and at the end of the day, it was more about quality bonding time between siblings than it was a complicated pastry masterpiece. It's moments like this that I cherish and know that I am lucky to be so close with my sister.

INGREDIENTS

1 cup sweet unsalted butter, at room temperature

1 cup sweet creamy peanut butter

1 cup granulated sugar

1 cup brown sugar or 1 cup light muscovado sugar, packed

2 large eggs

2 cups all-purpose flour

1 teaspoon baking soda

2 cups semi-sweet chocolate chips


DIRECTIONS

  • Preheat oven to 325 degrees F.

  • Have ready at least 2 baking sheets lined with parchment paper.

  • Cream butter until smooth.

  • Add peanut butter and both sugars and beat until combined well.

  • Add egg and beat well.

  • Stir in flour and baking soda gradually until well combined.

  • Stir in chocolate chips by hand.

  • Scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2" gap between each cookie.

  • Bake for about 15 minutes or until cookies are just firm around the edges

  • Repeat until all dough is baked into delicious, yummy, golden brown cookies!
